lots of command line goodness via macports; SVN, Vim, Ruby, Python, etc.

Oh, plus Textmate (editing), Last.fm and AirFoil (music), Skype (er, skype)Adium (IM), Colloquy (IRC), Skim (PDF) and Writeroom (writing).

I suppose I should add that I would have certainly installed Photoshop and CSSEdit if there had been any spare licenses, but this machine is mostly for coding rather than design. I might install the GIMP, I guess, although I’ve never figured out how to use it.

@blake: I’ve given up on IM clients when out-and-about with a laptop; I just use Meebo now.

@Gareth: Meh, command line. I am an artiste! ;)

I just did a clean OS X install a couple weeks ago – in order of installation:

# Quicksilver

# TextMate with XSLT, XML, and JSLint bundles

# PHP5, MySQL, SVN – manual installs

# Safari add-ons: Inquisitor, Tidy

# Cyberduck

# Firefox and Firebug

# Opera

# Timeous – time tracking

# TexShop – how can a developer not like LaTeX?

# MS Office – for Excel

# Vienna

# Adobe CS3 (design std)
